Description

The clay forms for Sponge Cake of the Fair of Tableware are composed of 2 equal parts and a glass that is loose.

How to assemble the shape:

Place the cup in the center of one of the parts.

Line with sheets of almaço paper in order to cover everything (to line the 1 kilo shape 4 sheets of almaço paper are needed).

Finally pour the dough and place the other part on top, the pan is ready to go to the oven.


Some important tips before baking sponge cake:

The oven (electric or gas) should not be preheated, and should be connected to a temperature between 170 to 190 degrees at the time the clay form is placed inside.

Place the oven grill in a position that allows the clay pan to receive heat evenly (never place the pan at the base of the oven).

If you choose a wood oven do not put the pan at the base of it, but always on top of a 4-legged grill.

When finally take the clay shape from the oven being the same still hot, never put it on top of cold surfaces such as marble, granite, stainless steel, etc. because it can break due to thermal shock, the ideal is to use a base of wood or cork.


Some important tips with washing:

Never wash the clay pan on the counter in running water, to clean use only a well-twisted wet cloth, remember that the dough will always be in contact with the paper and not with the shape.
